Ingredients
COFFEE BUTTER
-1 1/2 cups butter (3 sticks)-1 cup whole coffee beans
BROWNIES
-Prepared coffee butter, melted-3 1/2 cups sugar
-1 tablespoon kosher salt
-1 tablespoon vanilla
-2 cups all-purpose flour
-1 1/4 cup cocoa powder
-6 eggs

COFFEE BUTTER
- Place the coffee beans and butter in a small vacuum seal bag and seal on vacuum level 3.
- Cook the butter sous vide at194°F for 3 hours. Use the Wolf convection steam oven, separate sous vide equipment, a pot of water with an immersion circulator, or simply a pot of water on the stove and a thermometer.
- Strain the beans from the butter and discard.
- Use immediately or transfer the butter to another bag or container and refrigerate until use.
BROWNIES
- Preheat the oven on Convection Mode at325°F with a rack set on position 2.
- In a large bowl, whisk together the sugar, salt, vanilla, and melted butter.
- In a separate bowl, sift together the flour and cocoa powder.
- Add the eggs, one at a time, to the large bowl with the butter and sugar mixture and mix well.
- Using a spatula or rubber scraper, mix in the flour mixture until well combined.
- Generously grease or butter a 9 x 13 inch pan.
- Pour the batter into the pan and spread until level.
- Bake 35-40 minutes.
